Solubility Slightly soluble in water; freely soluble in 3 N Hydrochloric acid and in 2 N Nitric Acid, insoluble in alcohol
Acid-insoluble substances as per Pharmacopoeia
Heavy metals Not more than 20 ppm
Lead Not more than 10 ppm
Fluoride as per Pharmacopoeia
Arsenic Not more than 3 ppm
Loss on drying Between 10.0 and 13.3 % w/w
Assay Between 97.5 and 100.5 % w/w

  • Commonly used as a food additive, as a preservative, but sometimes for flavor
  • It is also found in some dietary calcium supplements.
  • Used as a water softener because the citrate ions can chelate unwanted metal ions.
